Water is heavy, so many backpackers will buy dehydrated, packaged food. Some hikers will dehydrate their own food and package it themselves. Dehydrating makes the food lighter and can help preserve it.
Air wastes space and makes your pack unstable. Air can also affect the freshness of your food.
